With this tour you will discover two small family-run businesses that still try to work raw materials “as they once did”.
After about ten kilometres, we reach a small cheesefactory run by a young couple who work a few wheels of Parmigiano Reggiano per day.
After the visit, we continue on low-traffic roads to reach a farmhouse with a view of the Apennines. Here, even today, pigs are slaughtered only for self-production and consumption on site. The cured meat is made only with cold temperature (Dec and Jan). There are also fruit trees of ancient varieties and wild animals. The 80% of what is on their menu comes from their work following the seasonal rhythms.
